Chocolate cobbler, also known as pudding cake, is like a cousin to molten lava cake. When I hear “cobbler” I think of a casserole filled with crusty biscuit pastry with some fruit filling. But chocolate cobbler is nothing like a fruit filling pie. It’s rich, fudgy and best of all, it’s so easy to make and perfect for a party or family gathering. I saw this being demonstrated on a show and was so intrigued when hot water was poured on top of the raw cake. It seemed like magic when I saw the ooey gooey amazingness that came out of the oven. So I tried a free from, allergy-free version, and the substitutions were practically 1:1. It definitely helps that the regular recipes doesn’t usually call for eggs. I doubled the recipe and recently served this with my vegan vanilla ice cream at a dinner party I hosted. No one had any food allergies or diet limitations, but it sure was a damn hit! 🤩
The Cake
Now I put a little almond flour in this, since it’s the only tree nut we are not allergic to here, but if you can’t do almonds, you can just use all gluten-free flour. The cake is a one-bowl batter type, which is my favorite kind (less dishes, always a heck yeah!). So in a large bowl, add the flour, the baking powder, salt, cocoa powder and sugar.
Whisk and then add in your choice of dairy-free milk, vanilla extract and oil. Whisk again until incorporated. Scrape into a greased baking pan. I like to use my glass pyrex pan for this, but any baking pan should work.
The Ooey Gooey Amazingness
Mix the brown sugar and the other portion of cocoa powder together in a bowl. Sprinkle this evenly over the cake batter.
Now pour the hot water gently over the entire two layers. DO NOT stir at all. Carefully transfer to the oven and bake for about 40 minutes. This is where the magic happens. Somehow, this concoction turns into a combination of opposing but amazing textures. You have some parts that are like crispy brownie edges, some fluffy cake, mixed in with silky thick chocolate sauce. Now remember, all of this is hot and warm. So when you top it with my vegan, nut-free vanilla ice cream? It is the best FREE FROM chocolate dessert. Yuuuuuuummmmm…..

Gluten-Free, Dairy-Free Vegan Chocolate Cobbler

105g gluten-free flour (See Notes)
29g almond flour (See Notes)
4tsp baking powder
1/4tsp fine sea salt
186g pure cane sugar
10g plus 20g cocoa powder, separated
1/2c dairy-free milk
1 tsp vanilla extract
2 Tbsp avocado oil, plus more for greasing the pan
4 1/2oz light brown sugar
1 3/4c hot water
Directions
- Preheat oven to 350º F and set the rack to the center of the oven.
- Grease an 8″ x 8″ pan with oil and set aside.
- Boil some water in the kettle while you prepare the cake.
- In a large bowl, add the flour, the baking powder, salt, 10g of cocoa powder and sugar. Whisk together.
- Then add in the dairy-free milk, vanilla extract and oil. Whisk again until incorporated.
- Scrape into a greased baking pan.
- In a small bowl, combine brown sugar and the rest of the cocoa powder. Sprinkle evenly over the cake batter.
- Slowly add the hot water on top of the two layers and do not stir at all.
- Carefully transfer to the oven and bake for 40 minutes.
- When done, remove from the oven and serve warm with ice cream. (See Notes)
Notes
- • I don’t use any xanthan gum in this recipe. I make my own gluten-free flour (white rice flour, brown rice flour, tapioca starch and potato starch) and it doesn’t contain any xanthan gum.
- • If you can’t use almond flour, just omit it and increase the amount gluten-free flour to 140 grams.
- • If you don’t want to make your own free from ice cream, I recommend Oatly’s vanilla ice cream. Their other flavors are phenomenal too, so any of them would work here.
